6 tablespoons | Red wine vinegar |
½ cup | Water |
2 tablespoons | Liquid smoke |
¼ cup | Honey |
½ cup | Packed brown sugar |
3 tablespoons | Crystallized ginger -- |
\N \N | Finely chopped |
2 tablespoons | Dark molasses |
1 tablespoon | Worcestershire sauce |
¼ teaspoon | Tabasco sauce |
2 tablespoons | Chile powder |
1 tablespoon | Ground coriander |
1 tablespoon | Dry mustard |
1 teaspoon | Salt |
Sautee onion until golden. Add garlic for one minute. Add remaining ingredients. Bring to boil. Reduce heat and simmer 45 minutes stirring frequently.
Hmm... I would replace the water with a nice malty beer. Paulaner Oktoberfest or Dos Equiis. And use a couple of chipotles in adobo instead of liquid smoke. They use the jock straps of the volunteer fire department to make that stuff.
