2 tablespoons | Vegetable oil |
3 tablespoons | Butter |
4 \N | Sole fillets Salt and pepper to taste |
1 cup | Flour |
10 \N | Shrimp, cleaned |
½ pounds | Mushrooms, sliced |
1 tablespoon | Chopped parsley |
½ \N | Lemon, juice of |
Heat oil and 2 tb butter in large fry pan over low heat. Sprinkle fish with salt and pepper; coat with flour. Fry over low heat 3 minutes. turn and cook another 3 minutes or until done. Remove to serving platter; keep warm. Add shrimp. mushrooms and parsley to same fry pan. Cook for 3 minutes, shaking pan frequently. Stir in remaining butter, lemon juice, salt and pepper. Pour over fish and serve.
