Shrimp sauce

Measure Ingredient
2½ pounds Shrimp, boiled, chopped
3 \N Strips raw bacon, chopped
2 \N Cloves garlic, minced
2 cups Milk, scalded
2 drops Yellow food color
¼ \N Stick butter or oleo
¼ cup Sherry
2 ounces Chopped mushrooms
3 smalls Green onions, chopped
1 tablespoon Seafood seasoning
1 teaspoon Parsley flakes
½ cup Flour
¼ cup Lemon juice

Fry bacon, add green onions and saute until soft, not brown. Add mushrooms. Add garlic. Let cook a few minutes. Add butter, then flour.

Reduce heat and saute until light brown. Add milk gradually. Add lemon juice and wine. Add chopped shrimp and seafood seasoning. Mixture will be thick. Cook over low heat for 5 min. Freeze or refrigerate until ready to use. Stuffs 100 bite sized patty shells or can be used over toast or as sauce for broiled fish. Thin with milk if using for sauce.
