Seafood delight

Measure Ingredient
1½ pounds Small to medium size shrimp, frozen; thawed
16 ounces Linguini
6 ounces Snow peas, frozen; thawed
\N \N Or a handful of fresh; blanched
6 \N Green onions; chopped
4 mediums Tomatoes; peeled, chopped, and
\N \N Drained
¾ cup Olive oil
¼ cup Fresh parsley; chopped
⅓ cup Wine vinegar
1 teaspoon Oregano
½ teaspoon Basil
½ teaspoon Garlic salt
½ teaspoon Black pepper; coarsley ground

Cook linguini according to package directions, omitting salt; drain. Rinse with cold water and drain again. Combine shrimp, linguini, and remaining ingredients; toss gently. Cover and chill at least 2 hours.

NOTES : If using fresh shrimp use 1½ pounds umpeeled medium size shrimp. Bring 5 cups water to boil; add shrimp and cook 3 to 5 minutes. Drain well; rinse with cold water. Chill. Peel and de-vein shrimp.
