Santa fe chicken/roasted corn salsa

Measure Ingredient
\N \N Two 8 oz. chicken breasts
2 tablespoons Olive oil
\N \N Chili powder
\N \N Cumin powder
1 large Tomato
1 \N Ear sweet corn; (kernels only)
\N \N ; roasted or
\N \N ; charbroiled
½ \N Lime juice
1 dash Tabasco
½ teaspoon Chef salt
1 teaspoon Chopped cilantro
1 tablespoon Red onion chopped

SALSA

Lightly season chicken breast with chili and cumin powders. Saute in olive oil until chicken is cooked thoroughly (160 degrees F).

To make salsa - dice tomato and red onion in very small pieces. Cut corn off the ear and mix all ingredients. Place about ¼ cup of mixture over chicken and serve.
