4 \N | Strips bacon, chopped |
¼ cup | Bacon fat |
\N \N | Juice of 1/2 lemon |
½ cup | Sour cream |
(The beef can be raw or cooked) Combine the rice, beef, salt, pepper, eggs, and lemon rind. Fry the bacon until crisp; then add and mix well. Form dumplings the size of an egg. Flatten these a little with a spoon. Then brown on both sides in hot bacon fat. Remove to a warm platter. Stir the lemon juice and sour cream into the fat to make a gravy and pour over dumplings.
