Rice noodle and pea salad

Measure Ingredient
2 cups Rice stick noodles; soaked in hot water
1 cup Snap peas; blanched
1 cup Snow peas; blanched
8 \N Thai basil leaves chiffonade
1 cup Julienned red bell pepper
\N \N Juice of 1 lime
\N \N Brown Butter Vinaigrette; see * Note
\N \N Salt; to taste
\N \N Freshly-ground black pepper; to taste

* Note: See the "Lemon Grass Caper Brown Butter Vinaigrette" recipe which is included in this collection. In a large bowl, toss everything together with the vinaigrette. Season and taste. This recipe yields 4 servings.
