Rhubarb compote

Yield: 4 servings

Measure Ingredient
1 cup Sugar
¼ cup Water
6 cups Rhubarb
1 \N Strip of orange rind
1 cup Sliced strawberries

In the top of a double boiler over direct heat bring sugar and water to a boil. Place over boiling water in double boiler and stir in rhubarb and orange rind. Cover and cook over gently boiling water without stirring for 15 to 20 minutes or until tender. Turn off heat and let cool in pan. Chill. To serve remove orange rind and stir in strawberries.
