Red cabbage alsatian style #2

Yield: 6 Servings

Measure Ingredient
3¾ pounds Red cabbage
\N \N Cooking spray
2 cups Onions; coarsely chopped
½ teaspoon Garlic; minced
1 medium Granny Smith apple; peeled and cored
½ cup Red wine vinegar
½ cup Water
1 tablespoon Caraway seed
6 tablespoons Brown sugar

Cut the slices into bite-sized pieces. Saute the onion and garlic in cooking spray until the onion is wilted. Add the cabbage and cook for about 5 minutes. Meanwhile, cut the apple into quarters. Cut the quarters crosswise into very thin slices. There should be about 2 cups. Add the apple slices, vinegar, water, caraway and brown sugar to the cabbage. Stir.

Cover and cook for 1½ hours, or until the cabbage is quite tender.
