Measure | Ingredient |

4 cups | Thinly sliced napa cabbage (Chinese cabbage) |
¼ cup | Chopped red bell pepper |
¼ cup | Chopped yellow bell peppers |
¼ cup | Unsalted cashews, toasted |
¼ cup | Red wine vinegar |
1 tablespoon | Olive oil |
⅛ teaspoon | Salt |
⅛ teaspoon | Pepper |
Combine all the ingredients in a large bowl, and toss well. Cover and chill 30 minutes. Yield: 4 servings (serving size: 1 cup).
