Raisin peanut balls

Yield: 6 servings

Measure Ingredient
½ cup Peanut butter
1 cup Raisins
1 tablespoon Lemon juice
¼ cup Powdered sugar
½ cup Shredded coconut
¼ teaspoon Salt
¼ teaspoon Cinnamon

Plump raisins by steaming. Drain and chop. Roll coconut into fine pieces. Toast to a light brown in moderate oven (370 F). Mix peanut butter, sugar, lemon juice, cinnamon, salt, and raisins.
