Quiche muffins

Yield: 10 muffins

Measure Ingredient
1 carton Cottage cheese (16 oz)
3 \N Egg whites
5 \N Eggs
¼ cup Buttermilk
¼ cup Flour
1 teaspoon Baking powder
¼ teaspoon Salt
2 cups Sharp cheddar, grated
2 \N Green onions
10 slices Bacon, cooked and crumbled

Preheat oven to 400. Place cottage cheese in a food processor fitted with steel blade and process until smooth. Transfer to a large bowl.

Process egg whites in food processor until foamy. Add next 5 ingredients and process until smooth. Add egg mixture to cottage cheese. Stir in cheese, onions, and bacon. Fill large greased muffin tins ⅔ full and bake 12-15 minutes or until edges are light brown.
