Puerto rican-style pork rub

Measure Ingredient
2 tablespoons Cumin; ground
2 tablespoons Garlic; minced
2 tablespoons Cilantro; fresh, rough chopped
2 tablespoons Black pepper; freshly cracked
2 tablespoons Salt
2 tablespoons White vinegar
2 tablespoons Yellow mustard
2 tablespoons Jalapeno pepper; minced
2 tablespoons Olive oil

Combine all ingredients and mix well. Use within two days of preparing.

Rub pork butt with spice mixture and smoke for 1½ hours per pound at 240-250F.
