Cut all the vegetables into matchstick strips 2" long. Heat the oil and fry the garlic until light brown.
Add the pork strips and fry for 1 minute. Add the other ingredients and fry over a high heat for 2 minutes. Add the seasoning and a few spoonsful of water, and serve hot.
