¼ cup | Vegetable oil |
3 \N | Potatoes; peeled and sliced |
1 \N | Onion; sliced |
2 cups | Tomatoes; chopped |
\N \N | Salt and freshly ground |
\N \N | Black pepper to taste |
1 teaspoon | Dried thyme |
\N \N | Pinch cayenne pepper |
Heat the oil in a large skillet on medium heat. Add the potatoes and onion and saute for 10 minutes. Add the tomatoes, salt, pepper, thyme and cayenne.
