|4½ ounce||Sliced Proscuitto Ham|
|4½ ounce||Sliced Mozzarella cheese|
|Sage to season breasts|
|1 ounce||Olive oil to sautee breast|
|4 ounces||Marsala wine|
|4 ounces||Softened butter|
|1 teaspoon||Chopped onion|
|1 teaspoon||Chef's salt to season|
|Flour - enough to dust chicken breast|

Slice breast open and season with sage. Fold Proscuitto ham around mozzarella cheese and stuff into chicken breast. Saute breast in olive oil over medium heat until breast reaches 165 degrees F. Remove breast to warm place (oven). Add chopped onion, Marsala wine, seasoning salt, and lemon.
Reduce wine by ½ and swirl in softened butter to form sauce. Serve sauce over chicken breast.
