Polo bono

Yield: 6 servings

Measure Ingredient
1 cup Tomato Juice
1 tablespoon Olive Oil
2 tablespoons Fresh Basil
2 teaspoons Fresh Rosemary
2 teaspoons Minced Garlic
6 eaches Chicken Breast Halves
1 tablespoon Olive Oil
6 eaches Tomato Slices
2 teaspoons Shallot, minced
¼ teaspoon Pepper
¼ teaspoon Salt (optional)
1 teaspoon Sugar
½ cup Italian Season Bread Crumbs
¼ cup Parmesean Cheese
6 eaches Onion Slices

GARNISH

Mix sauce ingredients in saucepan, simmer uncovered for 10 minutes.

Combine bread crumbs and cheese. Brush chicken with oil, coat with crumb mixture, put in lightly oiled baking dish. Top each breast half with a tomato slice and an onion slice. Cover all with the tomato sauce. Bake 30 minutes at 375 F.
