|1 tablespoon||Baking Powder|
|1 teaspoon||Baking Soda|
|1 cup||Evaporated Skim Milk|
|2 tablespoons||Vegetable Shortening|
|1||Egg -- beaten|
Preheat oven to 425 F. In a medium bowl, sift together the flour, sugar, baking powder, baking soda and salt. Add the remaining ingredients and stir just until the dry ingredients are moistened.
Spoon the batter into a muffin pan that has been sprayed with nonstick vegetable cooking spray. Bake for 20 mins, or until the muffins start to brown. Makes 12 muffins.
