Pineapple slices with a banana, ginger and rum syrup

400 grams Sugar; (14oz)
2 \N Bananas
5 \N Stem ginger balls
4 tablespoons Dark rum
200 millilitres Water; (6.6fl oz)
12 \N Pineapple slices

Caramelise the sugar with some water and add the water to form a syrup.

Pur‚e the bananas and ginger with the syrup, and add the rum. In a large roasting tin bake the pineapple slices for about 40 minutes in a hot oven and lift them out onto a rack to drain. Serve hot or cold with an ice cream and some the of the sauce.
