1½ cup | Soy milk |
2 tablespoons | Flour; unbleached |
1 tablespoon | Nutritional yeast |
1 teaspoon | Sugar |
1 teaspoon | Cinnamon |
1 tablespoon | Veg oil |
4 slices | Bread; to 6 slices, thick |
Mix the soy milk, flour, yeast, sugar and cinnamon vigorously with a wire whisk or beater. Pour the mixture into a wide, shallow or pie pan.
Heat the oil in a frying pan or skillet. Dip a bread slice into the mixture and then place in skillet. Fry each side until golden brown and crispy, about 5-7 mins total. Remove from pan and keep warm while cooking remaining slices. Serve hot with maple syrup.
