|1 small||Onion; peeled and finely|
|4 ounces||Bread stuffing mix|
|1 ounce||Vegetarian Parmesan cheese|
|4||Free-range eggs; well beaten|
|6 ounces||Butter; melted|
|½ teaspoon||Freshly chopped thyme|
|1||Clove garlic; finely crushed|
|¼ teaspoon||Freshly ground black pepper|
|7 ounces||USA peanuts; chopped|
1. Pre-cook and thoroughly drain the spinach. Mix all the ingredients apart from the chopped peanuts together in a large bowl and chill for 1-2 hours.
Form into balls and then roll each ball in the chopped peanuts.
2. Cook for 15 minutes in a pre-heated oven at 180øC/350øF/gas mark 4 until lightly browned. Serve hot or cold.
