Pasta house salad

Yield: 1 Servings

Measure Ingredient
6 tablespoons Parmesan cheese
4 tablespoons Red wine vinegar
4 tablespoons Lemon juice
1 cup Salad oil
2 teaspoons Salt
½ teaspoon Pepper
2 tablespoons Sugar
½ teaspoon Garlic powder
1 medium Red onion, sliced very thin
4 tablespoons Chopped pimento
1 can Artichoke hearts, sliced

This is a copycat of the salad served at The Pasta House (and Rich & Charlie's) in St. Louis, Missouri: Mix together all ingredients except for parmesan cheese and pimento.

Marinate overnight in airtight container. Just before serving, add cheese and pimento. Pour over one large head of iceberg lettuce.
