Passion fruit curd

Yield: 6 Servings

Measure Ingredient
6 larges Egg yolks
½ cup Sugar
½ cup Frozen passion fruit juice drink concentrate, thawed
1 pinch Salt
\N \N Grated rind of 1 lemon
2 tablespoons Fresh squeezed lemon Juice
4 tablespoons Unsalted butter

In the top of a double boiler, whisk egg yolks, sugar, hot juice, salt, lemon rind and lemon Juice. Cook over boiling water 8-10 minutes, stirring constantly, or until mixture thickens and clings to the back of a spoon. Remove from heat. Cool 3-4 minutes, stir several times. Stir in butter, one tablespoon at a time. Cover mixture and refrigerate until needed. Can be made one week m advance.
