| Measure | Ingredient |

| 1 pounds | Sliced squash or eggplant |
| 1 teaspoon | Sugar |
| ½ cup | Mayonnaise |
| ½ cup | Minced onion |
| ¼ cup | Chopped green pepper |
| ½ cup | Chopped pecans |
| 1 | Egg; slightly beaten |
| ½ cup | Grated cheese |
| Salt & pepper to taste | |
| Bread or cracker crumbs | |
| ½ | Stick butter or margarine |
Cook squash, drain & mash. Add other ingredients except butter & crumbs.
Put in 2-quart casserole. Top with crumbs & dot with butter. Bake 35-40 minutes at 350. Serves 8.
