Pansit (noodles with pork)

Yield: 8 Servings

Measure Ingredient
1 tablespoon Oil
2 \N Cloves garlic, crushed
1 pounds Pork sliced thin OR
1 pounds Ground pork
½ pounds Fresh shrimp, chopped
1 \N Small onion, sliced
6 \N Dried mushrooms (pre-soaked
\N \N And sliced thin)
2½ cup Chicken broth
\N \N Salt and pepper to taste
1 pack Long rice
2 packs Dried noodles
\N \N Green onion, sliced thin

Heat oil, fry garlic and pork til slightly browned Add shrimp and fry til shrimp turns pink. Add onions and mushrooms. Fry about 1 minute, then add chicken broth, salt and pepper; bring to a boil.

Then simmer about 5-10 minutes. Soak long rice til soft, then cut into 2" lengths. Add long rice, then noodles. Garnish with green onions. Shirley Macadangdang
