Oven baked eggplant

Measure Ingredient
\N \N Eggplant
\N \N Italian dressing
\N \N Breadcrumbs

peel and slice eggplant. dip in italian dressing (even fat free works).

coat well in breadcrumbs.

Spray a cookie sheet with Pam, place eggplant slices on sheet, bake at 425 degrees for 20 minutes, turning once.
