Our best bran muffins**

Yield: 12 servings

Measure Ingredient
1¼ cup Flour
3 teaspoons Baking powder
½ teaspoon Salt
½ cup Sugar
1½ cup Kellog's all-bran or bran
\N \N Buds cereal
1¼ cup Milk
1 \N Egg
⅓ cup Shortening or vegetable oil

Stir together flour,baking powder,salt and sugar. Set aside.Measure all-bran cereal and milk into large mixing bowl.Stir to combine. Let stand 1 to 2 minutes,until cereal is softened. Add egg and shortening. Beat well. Add flour mixture,stirring only until combined.Portion batter evenly into 12 greased muffin pans. Bake in 400 degrees for about 25 minutes or until lightly browned.

Variations 3 cups kellogg's raisin bran cereal or 2½ cups kellogg's 40% bran flakes cereal may be substituted for All-Bran.
