| 1 bunch | Fresh; stemed rosemary |
| 2 tablespoons | Dried thyme |
| 1 cup | Balsamic vinegar |
| 3 cups | Apple juice |
| ½ cup | Olive oil blend |
Mix marinade well the place ostrich in overnight. (4 hours minimum) salt & pepper meat before grilling.
NOTES : Also great for lamb, poultry, pork.
