Orange-banana muffins

Measure Ingredient
¾ cup Whole-wheat flour
¾ cup Rolled oats
½ cup Unbleached flour
1 tablespoon Baking powder
½ cup Brown sugar; packed
½ teaspoon Salt
3 tablespoons Wheat germ
1 teaspoon Ground cinnamon
½ cup Milk
½ cup Orange juice freshly squeezed
1 large Egg; lightly beaten
1 cup Banana; mashed
2 tablespoons Orange zest; grated
¼ cup Unsalted butter; melted

In a large bowl, combine the dry (first 8) ingredients. In a small bowl, combine the liquid ingredients, mixing well. Add the liquids to the dry ingredients all at once and stir until just moistened. Spoon the mixture into the muffin cups, filling each ⅔ full.

Bake for approx. 25 mins, or until golden and a toothpick inserted in center of muffin comes out clean.
