|8 smalls||Chicken breasts|
|½ cup||Butter or margarine,melted|
|Salt, good sprinkle|
|1 tablespoon||Grated orange rind|
|1½ cup||Prepared orange juice|
|14 ounces||Pineapple tidbits with juice|
|¾ cup||Chopped pecans or walnuts|
|2 tablespoons||All-purpose flour|
|2 teaspoons||Soy sauce|
|Sliced oranges, for garnish|
Dip meat into melted butter. Place on baking sheet with sides. Sprinkle with salt and pepper. Bake uncovered in 400øF oven for 20 minutes. Reduce oven heat to 350øF.
(SAUCE): Measure next 7 ingredients into saucepan. Bring to a boil stirring often. Pour over chicken. Bake for 30 minutes more until tender.
Transfer meat to platter.
Pour sauce into saucepan. Mix flour, water and soy sauce until smooth. Add to saucepan. Stir over medium heat until it boils and thickens. Pour over meat. Garnish with sliced oranges.
