2 quarts | Sliced fresh okra |
4 \N | Fresh tomatoes, peel, dice |
1 \N | Med. green pepper, chopped |
1 \N | Med. onion, chopped |
5 tablespoons | Olive oil |
\N \N | Salt & pepper to taste |
Heat olive oil in lge. heavy skillet or pot and saute onion and green pepper until light brown. Add okra and tomatoes and season to taste with salt & pepper.
Cover and cook over low heat 30 to 40 min., stirring occasionally.
