These are the most wonderful low fat oatmeal raisin cookies. The nutmeg really stands out.

Preheat oven to 350. Soak the raisins for 10 minutes in water. Toast the oats and set aside - I didn't do this. Remove raisins from water drain & set aside. ( I just drained when I was ready for them) Spray 2 cookie sheets with pam.
Sift together mixture 1, mix thoroughly and set aside. Beat at high speed mixture 2 then add mixture 1. Fold in oats, add the raisins and the nuts if desired.
Drop by spoonful onto cookie sheets. Bake for approx 9 min at 350. Mine took closer to 15 minutes.
These are excellent! The nutmeg really stands out. Possibly because it isn't competeing with butter and shortening.
