Oatmeal cake #2

Yield: 8 Servings

Measure Ingredient
1 cup Oatmeal
1¼ cup Boiling water
½ cup Margarine
1 cup Brown sugar
1 cup White sugar
2 \N Eggs
1½ cup Flour
1 teaspoon Each baking soda and cinnamon
½ teaspoon Salt
6 tablespoons Margarine; melted
¼ cup Evaporated milk
1 cup Coconut
1 cup Chopped nuts
½ cup Brown sugar
1 teaspoon Vanilla

TOPPING

Mix oatmeat & boiling water, let stand 30 minutes. Cream margarine & sugars. Add 2 eggs & oatmeal mixture. Sift flour, baking soda, cinnamon & salt & add to creamed mixture. Bake for 35 minutes at 350 on long sheet cake pan. Mix topping ingredients & spread over cake when done; place under broiler until bubbly.
