½ cup | Plus 3 Tbsps. vegetable oil |
1½ cup | Date sugar |
½ cup | Minus 1 1/2 tsp. water |
3 \N | Extralarge eggs; or 6 whites |
¾ cup | Flour |
½ cup | Unsweetened cocoa powder; well packed |
½ teaspoon | Salt |
½ cup | Chopped nuts |
¾ teaspoon | Baking soda |
1. Preheat the oven to 350 degrees. Oil the bottom only of a 9 X 9 inch baking pan.
2. In a large bowl stir together all ingredients except baking soda until well combined.
3. Stir in baking soda quickly and mix (28-30 beats) until smooth.
4. Immediately pour the batter into the prepared pan and bake for 20 minutes at 350 degrees.
5. Turn down the oven to 325 degrees and bake another 15 minutes.
6. Remove pan from the oven and place on a wire rack, cool for 30 minutes before cutting brownies.
NOTES : DATE SUGAR: Made from dehydrated ground dates. It resembles coarse brown sugar but is not refined and contains valuable minerals and fibre. Date sugar can be found in most health food stores. Can be frozen.
