Place the water, sugar and tapioca in a 4-cup glass measure or casserole. Drain the peach juice from the can into the mixture.
Reserve 4 peach slices for garnish.
PLace the remaining peaches in a food processor, pulse on and off a few times to coarsely mash (or mash the peaches using a potato masher). Add the mashed peaches to the tapioca mixture; let stand for 5 minutes.
Stirring with a spoon after each 2 minutes, microwave on high 4 to 5 minutes, or until the mixture begins to boil. Stir in the almond extract and pour into 4 dessert dishes. Cool 30 minutes, garnish with the reserved peach slices and then refrigerate.
