| 2 | Stalks Celery, chopped |
| 2 | Green Onions, chopped |
| 5 mediums | Zucchinis, chopped |
| 3 mediums | Tomatoes, chopped |
| 12 | Mushrooms, sliced |
| 1 | Clove Garlic, minced |
| 1 small | Pkg Sliced Almonds |
| The Seasoning Mix from the Rice pkg | |
| Seasoned Salt | |
| Garlic Powder or Salt | |
| Onion Powder or Salt | |
| Sweet Basil | |
| Oregano | |
| Italian Seasoning |
(A) In 2 Tbsp Olive Oil saute' Uncle Ben's White & Wild Rice until tender.
Add Water, cover and Simmer for 25 minutes. * Do Not add Rice Seasoning mix at this time*
(B) In another pan, saute' (in 1 cube Butter): Onion, Green Bell Pepper, Celery, Green Onions, Zucchinis, Tomatoes, Mushrooms, Garlic, and Almonds.
(C) Add the remaining according to taste.
(D) Mix into the Rice. Add ½ of this mixture into a baking dish, add a few slices of Monterey Jack Cheese. Add remainder of mixture, and completely cover with Monterey Jack Cheese. Bake, uncovered, for 30 minutes in a pre-heated
375 degree oven.
