|2 tablespoons||Olive Oil|
|1 pack||(6 oz) Uncle Ben's White & Wild Rice|
|1||Green Bell Pepper, chopped|
|2||Stalks Celery, chopped|
|2||Green Onions, chopped|
|5 mediums||Zucchinis, chopped|
|3 mediums||Tomatoes, chopped|
|1||Clove Garlic, minced|
|1 small||Pkg Sliced Almonds|
|The Seasoning Mix from the Rice pkg|
|Garlic Powder or Salt|
|Onion Powder or Salt|
(A) In 2 Tbsp Olive Oil saute' Uncle Ben's White & Wild Rice until tender.
Add Water, cover and Simmer for 25 minutes. * Do Not add Rice Seasoning mix at this time*
(B) In another pan, saute' (in 1 cube Butter): Onion, Green Bell Pepper, Celery, Green Onions, Zucchinis, Tomatoes, Mushrooms, Garlic, and Almonds.
(C) Add the remaining according to taste.
(D) Mix into the Rice. Add ½ of this mixture into a baking dish, add a few slices of Monterey Jack Cheese. Add remainder of mixture, and completely cover with Monterey Jack Cheese. Bake, uncovered, for 30 minutes in a pre-heated
375 degree oven.
