½ cup | Fried beancurd, cubed |

1 tablespoon | Dried shrimp, ground |
½ tablespoon | Blachan |
1 cup | Bean shoots |
1 \N | Spring onion, chopped |
\N \N | A little shredded lettuce |
1 tablespoon | Fried shallots |
Heat oil and lightly scramble egg, then add rice, potato, beancurd and onion.
Stir fry over high heat for a minute or two, then add shrimp and blachan. Keep stirring.
Toss in bean shoots and spring onion, and stir fry for a few minutes. Keep frying over high heat until rice feels dry but clingy.
Serve sprinkled with lettuce and shallots.
