|½ cup||Cooked potato, cubed|
|½ cup||Fried beancurd, cubed|
|1 tablespoon||Dried shrimp, ground|
|1 cup||Bean shoots|
|1||Spring onion, chopped|
|A little shredded lettuce|
|1 tablespoon||Fried shallots|
Heat oil and lightly scramble egg, then add rice, potato, beancurd and onion.
Stir fry over high heat for a minute or two, then add shrimp and blachan. Keep stirring.
Toss in bean shoots and spring onion, and stir fry for a few minutes. Keep frying over high heat until rice feels dry but clingy.
Serve sprinkled with lettuce and shallots.
