| 3 tablespoons | Butter |
| 1 | Green Pepper cut into half rings |
| 1 medium | Spanish Onion cut into half rings |
| 1½ cup | Dry Bread Crumbs |
| 6 | Ripe Tomatoes, sliced |
| 1½ teaspoon | Salt |
| ¾ teaspoon | Pepper |
Preheat oven to 325 degrees. Lightly butter a baking dish. Melt 2 Tbsp. of Butter in a skillet. Saute' the green pepper and onion rings until soft.
Sprinkle the baking dish with ¼ of the bread crumbs. Cover with ⅓ of the tomato slices. Cover with ⅓ of the sauteed pepper and onion rings.
Season with salt and pepper. Make 3 layers. Dot with remaining 1 Tbsp of Butter. Bake for 45 to 60 minutes.
This is especially good made with ripe tomatoes fresh from the back yard garden! Enjoy!
