Nan's lemon curd cheese

Measure Ingredient
½ cup Butter
2 cups Sugar
3 larges Eggs; beaten
2 \N Lemons; juice only

Melt butter and sugar in double boiler. Add eggs and juice and cook, stirring until thickened. Put in jars and cool. Keeps for months in fridge.
