| Measure | Ingredient |

| 2 larges | Green chilies |
| 4 smalls | Chilies |
| 2 | Cloves garlic |
| 2 smalls | Shallots |
| 1 medium | Tomato |
| 1 | Round eggplant |
| 2 tablespoons | Lemon juice |
| ½ teaspoon | Salt |
| 1 teaspoon | Sugar |
Wrap first six ingredients in foil and broil until soft. Then place in mortar and pound into a liquid paste. Add the remaining ingredients and mix well.
