My chicken sausage oyster gumbo

Yield: 9 servings

Measure Ingredient
1 cup Oil
1 cup Flour
1 \N Bell pepper, chopped
3 \N Or 4 ribs celery, chopped
3 \N Or 4 cloves garlic, minced
2 \N Onions, chopped
1 \N Chicken, cut up
1 pounds Smoked sausage or andouille, sliced
1½ quart Boiling water
2 \N Bay leaves
1 pint Or 2 doz oysters (optional)

Salt and pepper Cooked rice

Make a dark roux wtih oil and flour. Add bell pepper, celery, garlic, green onions, and onions. Saute until tender. Add chicken and brown. Add sausage, boiling water, and bay leaves. Let simmer for 1 hour.

Remove chicken from bones. Add chicken meat, salt, pepper, and oysters. Cook for 10 minutes more. Serve over rice.

Serves 9 to 10.
