| 3 tablespoons | Shortening |
| ¾ cup | Brown sugar |
| 1 ounce | Tofu, mashed |
| 2 teaspoons | Baking powder |
| ½ teaspoon | Salt |
| ½ teaspoon | Cream of tartar |
| ¾ cup | Water |
| 1 cup | Chocolate chips |
| 2 cups | All purpose flour |
Cream together the shortening & brown sugar. Add the tofu. Mix in the baking powder, salt & cream of tartar. Mix thoroughly. Slowly blend in the water. Stir in the chocolate chips. Add the flour a cup at a time, mixing well after each addition.
Spoon batter into oiled muffin tins. Bake in a preheated 350F oven for 20 to 25 minutes, or when the tops are lightly browned.
