|1||Clove garlic; crushed|
|1||500 gram pac chicken mince|
|2 teaspoons||Ground cinnamon|
|1 teaspoon||Ground coriander|
|1||500 gram pac fresh plum tomatoes; roughly chopped or|
|; 400g can chopped|
|150 grams||Ready to eat dried apricots; (5oz)|
|1 tablespoon||Tomato puree|
|Salt and freshly ground black pepper|
Heat the oil in a large saucepan, add the onion and garlic and cook for 3-4 minutes.
Add the chicken to the onions and cook stirring occasionally for 10 minutes, then add the cinnamon, apricots, coriander, tomatoes and tomato puree. Cover the pan and cook for a further 15 minutes.
Season to taste and serve.
Notes Delicious served with steamed buttered couscous and whole green beans.
