| 2 | Large; sweet onions |
| 2 | Eggs; separated |
| 1½ cup | Buttermilk |
| 1½ tablespoon | Vegetable oil |
| 1¼ cup | Flour |
| 1 teaspoon | Salt |
| 1¼ teaspoon | Baking powder |
Peel and cut onions into ½-inch slices. Separate into rings. Beat egg yolks; add buttermilk, oil and sifted dry ingredients. Beat egg whites until stiff; fold into buttermilk mixture. Dip onion rings into batter. In deep, hot oil in a large skillet, fry rings a few at a time until golden brown. Drain on paper towels.
