3 tablespoons | Vegetable oil |
1 medium | Can white or yellow hominy |
2 \N | Potatoes; boiled; (up to 3) |
1 medium | Onion; diced |
1 medium | Green bell pepper; diced |
1 cup | Chicken; cooked |
1 large | Tomato; chopped |
1 tablespoon | Fresh parsley; chopped |
Drain the hominy and heat in vegetable oil in large frying pan. Add thinly diced potatoes, onion, bell pepper, chicken and unpeeled tomato. Add parsley. Saute until onions just begin to brown. Serve with scramble eggs and Mexican hot sauce on the side.
