Meat loaf (#14)

Yield: 4 to 6 serve

Measure Ingredient
4 eaches Slices raw bacon, cut into
\N \N . 1/2 inch pieces
1¼ pounds Ground beef or turkey, or a
\N \N . mixture
½ cup Canned or homemade tomato or
\N \N . marinara sauce
½ cup Plain bread crumbs
½ cup Chopped onion
¼ cup Finely chopped celery
1 each Clove garlic, minced
½ teaspoon Dried oregano leaves
¼ teaspoon Salt
\N \N Freshly ground black pepper

1. Heat the oven to 325 degrees.

2. In a skillet, fry the bacon over medium heat 5 to 7 minutes until crisp. Pour off all but 1 tablespoon fat.

3. In a 1½- or 2-quart casserole, using your hands, mix all the ingredients with the bacon and reserved tablespoon of fat, until well blended. Do not overmix. It will toughen the meat loaf.

4. Shape into an 8-inch loaf in the casserole.

5. Bake 1 hour. Let stand 5 minutes. Pour off the fat. Slice and serve.
