Marmalade muffins

Yield: 12 servings

Measure Ingredient
2¼ cup Buttermilk baking mix
1 cup ;water
2 tablespoons Granulated sugar
¼ cup Egg substitute
½ teaspoon Vanilla extract
¼ cup All-fruit marmalade spread (12.5 calories per tsp.)

Preheat oven to 400 degrees F. Spray twelve 2-¾-inch muffin cups with nonstick cooking spray.

In large bowl, combine baking mix and sugar. Add 1 cup water, the egg substitute, and vanilla; mix until just blended. Spoon ¼ cup batter into each muffin cup; top each with 1 teaspoon orange marmalade. Spoon remaining batter evenly over marmalade.

Bake muffins 12-15 minutes or until toothpick inserted in center comes out clean. Remove; place on rack to cool.

Each serving provides: 1 B, 50 optional calories. Per serving: 112 cal, 2 g pro, 3 g fat, 20 g car, 271 mg sod, 0 mg chol.
