Heat oven to 375 degrees. Place squash, cut side up, in a buttered 13- by 9-inch baking pan.
In a large skillet over medium-high heat, saute celery and onion in butter or margarine until tender. Stir in Spam and potatoes. Cook, stirring occasionally, until potatoes are browned. Stir in apple and syrup. Spoon ½ cup Spam mixture into each squash half. Cover. Bake 40 to 50 minutes.
