½ teaspoon | Ground nutmeg; (freshly ground) |
2 teaspoons | Baking soda |
1 cup | Macadamia nuts; chopped; res 1 Tbls. |
1 pinch | Salt |
1 pack | (8 oz) cream cheese; softened |
2 tablespoons | Applesauce |
½ teaspoon | Cinnamon |
1 tablespoon | Macadamia nuts; (reserved from cake) |
ICING
* 4-5 cups
CAKE Peel and cut up apples. Put in a medium sized bowl and sprinkle 2 cups sugar over them. Toss lightly, being sure to coat each apples piece. Set aside while you sift the dry ingredients together. Toss the sugar and apples once more. Stir in eggs that have been lightly beaten with the vanilla. Add dry ingredients to apples, blending well. Fold in nuts.
Reserve I tablespoon to sprinkle on top of Icing. Pour into a greased 9" x 13" baking pan. Bake at 350 for 35 to 45 minutes. Cool ICING Combine softened cream cheese, applesauce and cinnamon. Spread on cooled cake. Sprinkle with chopped macadamia nuts.
