Madeline's muffins

Yield: 12 servings

Measure Ingredient
2½ cup Quick mix
4 tablespoons Sugar
1 \N Egg, beaten
1 cup Milk or water

: Preheat oven to 425. Grease muffin tins--do NOT use liners.

Place quick mix in a medium bowl. Add sugar and mix well. In a small bowl, vine eggand milk or water. Add all at once to dry ingredients. Stir just until blended. Fill prepared muffin tins ⅔ full. Bake 15 to 20 minutes, until golden brown. Serve hot with butter and honey, if desired.

Variations:

RAISIN, DATE OR NUT MUFFINS: Add ½ cup finely chopped raisins, dates or nuts to dry ingredients before adding liquid ingredients.

Before baking, sprinkle generously with sugar-cinnamon mixture.

BLUEBERRY MUFFINS: Add 1 cup well-drained blueberries to dry ingredients before adding liquid ingredients.

OATMEAL OR BRAN MUFFINS: Reduce quick mix to 1¾ cups. Add ¾ cup quick rolled oats or all-bran cereal to dry ingredients before adding liquid ingredients.

CHEESE MUFFINS: Add ½ to ¾ cup grated cheddar cheese to dry ingredients before adding liquid ingredients.

BROWN SUGAR MUFFINS: Substitute brown sugar for granulated sugar BACON BITS MUFFINS: Add 4 strips of cooked, crumbled bacon to dry ingredients before adding liquid ingredients.

APPLE MUFFINS: Add 1 cup grated raw apple to dry ingredients before adding liquid and increase baking time to 20 to 25 minutes.

ORANGE MUFFINS: Add 1 tbsp fresh orange peel or 1 tsp dry orange peel to dry ingredients before adding liquid ingredients. CRANBERRY MUFFINS: Add ⅔ cup chopped cranberries to dry ingredients before adding liquid ingredients.
